Chapter 3 Soups

3.1 Carrot and corriander soup

  • 1 onion
  • 350g carrots
  • 1 potato (or small can of butter beans)
  • celery
  • 1 tsp coriander
  • 750ml veggie stock
  • fresh coriander

Heat oil, add onion cook until soft. Add carrots, potato, celery. Cover and cook slowly for 10 min. Stir in ground/crushed coriander and pour in stock. Bring to boil, cook for 20*25 min. Blitz and serve.

3.2 Carrot and lentil soup

  • 600g peeled carrots
  • 200g red lentils
  • 1 stick celery
  • 1 onion
  • Chunk ginger
  • 2 garlic cloves
  • 2 tsp cumin seeds
  • 1/2 tsp turmeric and coriander

Atleast 1L water

Fresh coriander. Fry seeds, then onion, garlic, ginger.

3.3 Hot and sour detox soup - Nigella Lawson

  • 225g button mushrooms
  • 2 * 3 small Chillis, fresh red
  • 1 Coriander
  • 4 Kaffir lime, leaves
  • 1 Lemongrass
  • 1 Lime
  • 1 Spring onion
  • 1.4L Stock
  • 4 tbsp Thai fish sauce
  • 1 tbsp Tom yam paste
  • 1 tsp sugar

Heat the stock and tom yam paste in a decent sized saucepan with the lime leaves, lemongrass, lime zest and juice, fish sauce, chilli, and sugar. Bring to a boil, add the mushrooms, and simmer for a couple of minutes, then add the prawns and cook for a further 2 to 3 minutes. Serve with coriander.

3.4 Pea soup

  • 200/250g frozen peas
  • 400/500g stock

Blitz, then blitz again. Stir in butter and cream.
